Baked Galician-Style Scallops (Vieiras a la gallega)

Tete, my Galician friend invited me to celebrate the X'mas eve with her family in Galicia, the North-Western region of Spain.  I received a very warm welcoming from them. I appreciate everything they have done for me, especially, Tete. Thank you my dear friend. 


Galicia is very famous for their fresh sea food. And scallop shell is the symbol of Galicia and the Santiago de Compostela pilgrimate route.

Her mother allowed me to record a video while she was preparing "vieiras" or scallops. They were quite gigantic and tasted so delicious. I still have their shells for my soap dish. 

Today, I would like to share this easy-to-make recipe with you.



Ingredients:
- Scallops
- Chopped finely onion
- Chopped Garlic
- Olive oil
- Breadcrumb
- White wine
- Serrano ham

Preparation:
1. Seperate the scallops from the shells and clean out the sand. Do not throw away the shells. We are going to use them again before baking.
2. Fry onion and garlic. When they are soft and brown add the scallops and cook for 5 mins.
3. When the scallops are done, put them back in the shells.
4. Top with chopped Serrano ham, white wine, olive oil and breadcrumb.
5. Brown them in the oven for 5 mins.

I think cooking is fun when you have to estimate or be creative. Do not forget that cooking is not making chemical formula.
